Perfect meatless Dairy- Free lasagna

STEP 1

Cook the gluten free noodles and rinse them in cold water.

STEP 2

Heat oil over medium and cook the zucchini, mushrooms until they are softened, then add the spinach and peas and cook them about 5 more minutes.

STEP 3

Place hummus and other seasonings in a large bowl and add vegan cheese, then place ¼ marinara sauce, and noodles, continue layering.

STEP 4

Cover with foil and bak efor 30 minutes.

12 gluten free lasagna noodles

1 tablespoon olive oil

1 medium Chopped zucchini

½ sliced mushrooms

½ kg spinach

1 cup of peas

5 cups of Marinara sauce

Cheezmir Vegan Cheddar / Smoked sliced cheese

1 cup of hummus

Chopped Fresh basil

1 Tablespoon garlic powder
