VEGAN CAESAR SALAD

Vegan Caesar Salad has a few easy steps and ingredients;

  • Roasted Chickpea Croutons
  • Vegan Caesar Dressing
  • Vegan Grated Cheese
  • Romaine Lettuce

PREPARATION ;

STEP 1

Put the Chickpea Croutons into preheated oven, remove the moisture. After 5 mins add olive oil and other seasonings, infuse them gently. Bake them for 25 mins and remove them from oven.

STEP 2

Roast the garlic and chickpea croutons at the same time, bake about 15 mins then let it cool, boil the cashews for 5 mins to soften. Add all the ingredients in to mixer/blender, add 1 cup of water, lemon juice and blend them until mixture is very smooth.

STEP 3

Add Romaine lettuce into large salad bowl, pour the prepared dressing. Top with chickpea croutons and sprinkle 2 cups of  Cheddar or Smoked flavoured Cheezmir grated vegan cheese.

Chickpea Croutons

3 cups of cooked chickpeas

1 tablespoon olive oil

½ tablespoon garlic powder

½ tablespoon onion powder

½ teaspoon salt

Caesar Dressing

2 cups raw cashews

1 cup water

4-5 cloves garlic

1 lemon

½ teaspoon salt

Vegan Grated Cheese

2 cups of Cheezmir Cheddar Flavoured Vegan Cheese.
