PREPARATION
STEP 1
Add Chopped onion and olive oil into a frying pan, add the seassing, fry them until onions are softened. Add black beans and sweet corn along side with water, add salt and pepper, cook until water remove from mixture, leave it cool.
STEP 2
Add the cooked rice and chopped sundried tomatoes into a large bowl and mix them.
STEP 3
Preparing the guacamole sauce, add chopped avocado into a bowl and mash it, pour lime juice in it, and add salt and pepper.
STEP 4
Stuff the tortillas with mixture, on the top add chopped lettuce and guacamole sauce, fold in the sides and then roll it and Wrap in foil.
STEP 5
