Spinach and Cheese Muffin

Directions

Step 1

Grease 12 muffin cups with vegan butter and preheat the oven to 180 degrees C.

Step 2

Place the Flour, baking powder, baking soda and salt in a bowl and mix it until its firm.

Step 3

For egg subsitute, place 1 tablespoon of Flaxseed with 3 table spoons of water in a bowl and mix it, stir the vegan butter, almond milk, spinach,Flaxseed mixture and Cheezmir Cheddar Flavoured Vegan Grated Cheese in a large bowl and mix it until everything is done. Put 2 tablespoons of mixture into each muffin cup.

Step 4

Bake in preheated oven about 35 minutes.

Ingredients

1 ½ cups of gluten free flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

6 tablespoons  vegan butter, melted

1 table spoons of Flaxseed or 1 table spoons of Tapioca Starch for replace to egg ( see our post about 5 Eggs substitues for vegan baking)

1 cup of plant based milk

½ cup frozen chopped spinach

1 cup of Cheezmir Cheddar flavoured Vegan Grated cheese
