Rainbow Spring Rolls

Directions

Step 1 :

Add all the Sauce ingredients in a small bowl and combine them well.

Step 2 :

Thinly slice all vegetables and Cheezmir Cheddar Flavoured Vegan Block cheese, place near your workspace.

Step 3 :

Fill a small dish halfway with boiling water. Working one at a time, gently submerge a rice paper in boiling water for 15 seconds, or until soft and flexible. Place the paper on a wet surface . Working quickly, arrange the vegetables, Cheezmir Vegan cheese and herbs in a long thin row on the rice paper, allowing approximately 5 cm on either side. Fold the rice paper sides over the pile, then roll gently.

Step 4 :

Wrap the completed spring rolls in a wet paper towel until ready to serve. Serve with almond butter dipping sauce, cut in half if desired.

Sauce

  • 3 Tbsp almond butter 45 g
  • 1 Tbsp soy sauce 15 ml
  • 1 Tbsp lime juice 15 ml
  • 1 Tbsp honey 15 ml
  • 1 tsp grated ginger 5 g
  • 1 Tbsp hot water 15 ml

Spring Rolls

  • 8 small radishes 1 cup
  • ½ red bell pepper
  • ½ yellow bell pepper
  • 1 cup carrot 120 g
  • 1 avocado
  • Cheezmir Cheddar Flavoured Block Vegan Cheese
  • ½ cup basil 10 g
  • ½ cup parsley 10 g
  • 6 – 8 rice paper spring roll wrappers
