Put all the ingredients into a large bowl except eggplants, stir them into mixture.
Cut the eggplants in half and put into preheadted oven at 250C. Grill it until they are crispy and done.
Remove the grilled eggplants and pour the prepared mixture to the top of the eggplants.

1 chopped Avacado
½ lime juice
2 tablespoon grated ginger
2 tablespoon olive oil
1 cup of grated vegan cheese
